Plant based Bircher Muesli with Raspberry, Apple, Oats & Plant Based Milk

PLANT BASED VEGAN BIRCHER MUESLI

This is a plant based vegan bircher muesli. It has the same benefits as regular bircher muesli but is better for the environment and to your gut.

INGREDIENTS

(2 servings – prepare the night before)

  • 100g organic whole oats
  • 50g chopped almonds, hazelnuts or Brazil nuts (optional)
  • 40g goji berries or raisins
  • 1 apple, grated
  • ½ tsp cinnamon
  • Almond milk*

METHOD

Put the first five ingredients in a bowl and cover with the almond milk, mix thoroughly. The mixture should be quite sloppy, as the oats will absorb the extra almond milk overnight. Place in the fridge overnight. In the morning, stir thoroughly, serve half topped with fresh berries.

*You can substitute Almond mild with coconut, soy, hazelnut or any other plant-based milk or yogurt.

Bircher Muesli is the creation of Maximilian Bircher-Benner.  He was a Swiss doctor and nutritionist. He developed it for patients at his Zurich sanatorium at the turn of the last century as a way of getting  more raw fruit into their diets. His patients started every single meal with a bowl of his “little mush” – which was nutritious and easy to digest.

Bircher-Benner believed apples had cured him of jaundice as a young man. Fresher and fruitier than the more dry cereals, bircher muesli is the perfect way to start the day.
